Job Description

Key Objective
Responsible for the management of all resort Food & Beverage operations, ensuring consistent and high standards of F&B service and product quality.

Key Duties / Responsibilities

  • Plan and direct the functions of administration and planning of the Food & Beverage department to meet the daily needs of the operation.
  • Contribute to the resort organizational strategy and direction through provision of F&B information, analysis and recommendations, assisting in the strategic thinking, direction and concepts of resort F&B.
  • Lead, motivate and develop the F&B team through equality, communication and teamwork.
  • Mentor and guide the F&B Management team, encouraging ownership, transparency and initiative.
  • Build and maintain effective working relationships within the resort HOD team, ensuring effective communication of guest and resort information.
  • Analyze and apply trends to the F&B business plan, addressing guest, financial and market demands and evaluating the popularity and availability of seasonal and local food ingredients and beverages.
  • Develop and adhere to F&B budgets and capital expenditure plans.
    Implement F&B financial strategies through anticipation of requirements, cost and consumption and initiation of action plans to ensure minimal impact of variances.
  • Maintain control of F&B supplies through development of preferred supplier lists, negotiation of supplier contracts and prices and evaluating usage reports, ensuring corrective actions are applied.
  • Design of menus for all F&B service areas, providing quality products whilst adhering to budget guidelines and ensuring review and approval of all menus through consultation with Management, Executive Chef and F&B team.

Requirements / Qualification

  • Minimum 3 years’ experience in a 5* hotel/resort as Director of Food & Beverage.
  • Fluent in both written and spoken English with additional languages an advantage.
  • A positive “can do” attitude with good team work.
  • Previous experience within a remote environment preferred.
  • Must be able to work with Microsoft Fidelio – Material Control.
